Comment Another culinary discovery in Zeeland Flanders, the Netherlands. Chef Edwin Vinke was recently awarded to chief of the year 2011 by Gault Millau and this was the perfect motivation for a visit. This gastronomic restaurant is very stylish, many blacks and fine art pieces. The welcome and service, as always in this area is very cordial. We choose a small tasting menu. Some highlights:
* crab, avocado, green apple
* Seabass & langoest, potato, cucumber
* Cod with fried porkfat and a foam of kidney beans. I did not know brown beans could taste so good!
* Young deer with cereals, beetroot & macadamia
The dessert consisted of 3 dishes, I perceived a wow of flavors that goes well together: nuts, caramel, peanuts, kiwi, gin, meringue, colostrum, vanilla and chocolate.
All this accompanied with a proper Arnais Roero, Giacomoco Vico, made the long distance definitely worth a visit. I understood they were obviously disappointed with missing the second Michelin star and that's a fair point. We follow in this story in full Gault Millau with 17/20.
